Chilli Con Carne!
You might have seen me post a picture of my delicious Chilli con Carne the other week on Instagram, and if you did, you’ll be pleased to know I am finally going to share my recipe for it!
Now, I absolutely love mince! This is the only way I really get any red meat in my diet as I don’t eat pork or lamb and so other than the odd meal with mince, I really only eat Chicken… and that can get a little boring after a while!
This meal is perfect if you want something a little bit more exciting, or if you want a bit of spice in your life! Although, I made this again last week for my parents and perhaps made it a little bit too spicy… but it was still yum!
It is a great meal to have when eating healthily, because with it being homemade, you know EXACTLY what goes into that pan and all the ingredients I use are clean foods so you can eat and enjoy and not feel a scrap of guilt afterwards… perfect!
So here it is…
Tinned tomatoes (preferably plum as it gives a better taste)
Kidney Beans (drained)
*OPTIONAL – Chilli Jam by The Chilli Jam Man*
(use sparingly as a little goes a very long way!)
Firstly, fry the chopped onion and garlic in a pan with some olive oil.
Stir in any herbs and spices you want to add – I like to mix in my herbs and spices now, before I add the mince in because I feel like it adds more flavour but you can add them in later on if you want!
Then chuck in the mince and cook until completely brown.
Next, pour in the tinned tomatoes and the kidney beans and stir until all the tomato has broken up (if you used plum tomatoes).
Add in a teaspoon of salt, and if you want/have any, some chilli jam (highly recommended!). You literally need no more than 1 tsp of chilli jam though because it so HOT!
Let the chilli come up to temperature, and if you can, put it in a slow oven to let the flavours all come together even more. (If you can’t don’t worry about it too much!)
And there you have it, a homemade Chilli Con Carne!
I served this with brown rich, a dollop of crème fraiche and some grated cheese on top. Please ignore the pasta bowl I used… it isn’t pasta, I can assure you!
